Food From our Bakery

All the bakery goods used at Pat's House of Food are made fresh from scratch by Mrs. Pat. Dietary support is provided with delicious cookies, breads, pies, and cakes. Even the most reluctant eater might be tempted by our cookies rolled in multi-colored sprinkles or by having the ability to decorate their own gingerbread animal, object, or shape. Self-selected, individualized decorations add a sense of ownership and whimsey.

Development of our sourdough bread recipe is a constant process. It started almost three years ago with a starter sold by the King Arthur company. This starter has a long history-it is almost three hundred years old. The first piece of the recipe came from the idea of a no-knead bread. This recipe calls for a series of folds, but no kneading.

The technique of using tagines to proof and bake the loaves came from necessity and experimentation. The curved sides of the tagines' ceramic cover allows for rise in a humid environment and the enameled, cast iron surface of the base pops out the finished loaves perfectly every time.
